Choose ‘Cooking Wood’ for Your Pizza Oven
This guide gives more information about what matters when choosing what kind of wood fuel to burn in your pizza oven. It matters! You want crisp, light and above all hot pizza that cooks in moments and to achieve that we need to get your pizza oven up to a really high temperature.
Getting it Hot
To raise the temperature of your pizza oven as far as it will go, you need to burn hardwood logs. Why? Hardwood logs are much more dense than softwood logs and as a result they have a much more energy to give when they are burning.
Hardwood logs also burn longer, also because their cell structure is very dense. Hardwood logs grow very slowly which is how they become more solid and heavy. When they burn they burn hot and slow. You can raise the temperature of your pizza oven to a level you would never manage to achieve with softwood logs.

Kiln Dried = More Heat
However, even a wet hardwood log will dampen your ability to cook great pizza in a really hot oven. It is essential that your firewood is also kiln dried.
Kiln drying removes 80% or more of the moisture from your logs. Moisture is the enemy of burning hot because instead of using the energy stored in the log to heat your oven and cook your pizza, the energy in the fire is used to heat the water inside the log.
If that moisture is removed from the kiln dried log then all the energy stored in the wood fuel can be put to good use heating your oven.

Great Tasting Pizza
When cooking with wood the last thing you want is pizza that doesn’t taste ok because it has been tainted by the fuel used.
There are a few ways this might happen. Softwoods tend to give a more acrid flavour (if you can get the oven hot enough) so avoid these all together.
It’s also essential that you don’t use wood that’s been treated in any way with chemicals such as preservatives. Anything man made in your pizza oven is a definite no.
For perfect pizza choose Ash or Oak hardwoods.
